My focus for this project was to highlight the time, skill and hard work that goes into making (and keeping) food sustainable and good for you, and to question the systems of oppression surrounding food and its consumption.

I thought about how making high quality but simple food is an artform in itself, and, similar to art, it isn't accessible to purchase for all. The ability to afford only local, organically produced, minimally processed food, free from pesticides is something that shouldn’t be a luxury, but unfortunately is. 

We are in an age where time to prepare and enjoy food everyday is also a luxury.  As a society, we have never cooked less than we do now.

To draw attention to the labour required to make  our food, I have created still lives modelled from sustainable, local and organic Irish produce, titling each piece with the time it took to produce each food item - from 24hrs for an organic egg to be laid, 18 months for a wheel of cheese to mature and up to 4 years or more to harvest one single oyster.

In our capitalist society, these ‘food portraits’ serve as both a celebration of those who try in earnest to keep food good, and as a warning of what we could lose.
